Hee hee ha ha (Laughing Turkey Burgers)

Good co-workers are the best. My good co-worker / friend Lauren and I spent a large part of the day today discussing the delightfully funny snack that is laughing cow cheese. I swear...if we weren't doing notes or group, or if I wasn't karate kicking her door open to say hello, we were discussing this cheese. I usually eat it on wheat saltines (five crackers and one wedge of cheese for two points) but our disucssion today was focused on enjoying the snack on a Wasa cracker. On it's own, this cracker kinda tastes like cardboard. With a wedge of laughing cow cheese slathered on top of it, it is delightful (not to mention, one point.) The discussion eventually turned to turkey burgers as Lauren shared a tid bit of knowledge about putting a wedge of Laughing Cow INSIDE of a turkey burger. Glory be, this should be good.
Luckily, I had some leftover extra lean ground turkey and a wedge 'o laughing cow. After a little research, supper was born.

Laughing Turkey Burgers
inspired by Lauren B.

1/4 lb extra lean ground turkey
1 egg white
1 tbl seasoned breadcrumbs
1 tbl chopped parsley
1/4 onion, chopped
1 clove garlic, chopped
salt and pepper, to taste
1 wedge of Laughing Cow cheese (I used garlic and herb)

Combine all ingredients except for the cheese. Take half of the mixture, form it into a patty. Place cheese wedge on top. Take the rest of turkey mixture and mold it on top.

Cook the burger however you prefer; I did mine on the stove. Enjoy with a light wheat bun.

Serving size 1 burger

This was the recipe that I plugged into the WW website to get the points. However, next time I will use less turkey. The burger was HUGE and was tough to tell when it was cooked through. Despite that, it was very good.

In horse racing news, I'm getting way pumped about the Kentucky Derby. I don't follow horseracing really (that's more of Chickey's deal) but I do love to watch a race. There is something about that few minutes before the race when people are milling around, being all excited. Despite my lack of knowledge, I have picked a winner. Homeboykris. This decision was based purely on the name. Homeboykris? How could this horse NOT win. Now, all I need is a hat...


Patterns (Turkey and Jack Chimichangas)

Not talking about the ones you sew (even though I do enjoy a good pattern discussion.) Talking about the cooking patterns that I so comfortably ease into. When searching for recipes, I often find myself wandering into the ones that are fit for a fiesta. This one is just that. Welcome to the cooking rotation Turkey and Jack Chimichangas!
When I think of a chimichanga my mind first goes to the ones that are deep fried and served with white cheese dip from the Mexican restaurant by the Wal Mart in Greenville. Mmmmm. Delicious, yes. WW friendly, absolutely not. When I stumbled upon this gem on the world wide web, bet your bottom dollar I hit "print."

Turkey and Jack Chimichangas

cooking spray
1/2 lb lean ground turkey
16 oz fat free re-fried beans
1 3/4 cup salsa, plus more for serving
4 oz diced green chili peppers, drained
1 tsp chili powder
3 bunches green onions, chopped *
1 cup shredded reduced fat Monterey Jack cheese *
8 large burrito sized wheat flour tortillas *
1/2 cup fat free sour cream

Preheat oven to 350 degrees. Wrap tortillas in foil and warm in oven for 10 minutes.

Spray a skillet with cooking spray, heat over medium high heat. Cook turkey until done. Add re-fried beans, salsa, chili peppers, chili powder, and green onions. Cook until heated through. Remove from heat and stir in cheese.

Place 1/2 cup of turkey mixture into each tortilla. Fold in sides, roll up, place in baking dish sprayed with cooking spray. Bake for 20 minutes. Serve with salsa and sour cream, if you feel like it.

A few notes on this one. The original recipe called for scallions. I've never been too sure what a scallion is. What I do know is that whatever it is, they sure don't have it at the Greenwood Wal Mart. Every recipe that you seen on this blog that has green onions in it more than likely originally called for scallions. Also, I could not find reduced fat Monteray jack cheese. I substituted a cup of weight watchers Mexican cheese. There was one package of large tortillas left at the store today and, SHOCKER, they were not wheat. Oh well, worse things have happened.

Avitar? It's playing right now and kind of hard to follow when blogging about Mexican food. So far, it reminds me of the MGMT video for "Electric Feel." But something tells me that there is much more to it than that. I keep hearing really deep lines like "You can't teach someone to see" and "you can't fill a cup that's already full." Hmmm. Words to ponder on. Will for sure be paying more attention from here on out. It just might hold the secret to life.

That sandwich is not going to cook itself....(Sausage, Onion, and Pepper Sanwiches)

...so says Brandon. Very funny, Brandon. It was a laid back Saturday and sandwiches were on deck. When one thinks of a sandwich, one doesn't usually think about cooking or a lot of prep work. This one, however, does take a few minutes to put together. Hence Brandon reminding me that it was, in fact, not going to cook itself and I should go ahead and get on it instead of continuing to talk about how hungry I was. Very glad I did, twas quite enjoyable.

Sausage, Onion, and Pepper Sandwiches

cooking spray
8 oz turkey sausage, sliced
1 tsp olive oil
1 tbl minced garlic
1 medium yellow OR vidalia onion, thinly sliced (I couldn't find a Vidalia)
1 medium red bell pepper, thinly sliced
1 medium green bell pepper, thinly sliced
1 tbl balsamic vinegar
8 oz Italian bread

Heat medium skillet coated with cooking spray over medium heat, brown turkey sausage. Remove from skillet and cover to keep warm.

Add oil to skillet and heat for 45 seconds. Add garlic, onions, and both peppers to the skillet. Cook until soft. Return sausage to skillet. Add balsamic vinegar, toss to combine.

Split Italian bread not quite all the way through, top with sausage mixture. Cut into 4 equal pieces.

Serving size 1/4 of loaf

I used raspberry balsamic vinegar for this recipe. Not necessarily because I was being bold and experimenting with flavors, but because that was all I had. It turned out pretty good

Another weekend come and gone. Despite the horrid weather warnings, the weather in Oxford ended up being absolutely PERFECT. What is not perfect though is the fact that despite my best intentions - I got 3 pictures. One picture was absolutely awful. AWFUL. It's already been deleted. Here is one of me and Kallie.

Dinner was at the Waltz. It was not exactly WW but worth every single extra point. We walked it off later that night anyway. Yeah, I'll keep telling myself that.

After a shopping trip with Lindsey, lunch at Proud Larry's, and the purchase of anti aging cream, I began the trip back the the 'wood. Took a detour to the Lowes in Batesville and picked up these pretty purple petunias. They're the trailing variety. So exciting.

It's definitely almost summer, there is a cricket in my house.


Thunder Clap (Carbonara-is Spaghetti)

What does one do when rudely awakened by a thunder clap at 6 am on a Saturday? Blog about pasta, of course. Who am I kidding. I'm usually up obnoxiously early without the help of a storm. Oh, well. Keurig and the Today show are good with me.

On to the pasta.

I made this for supper last night, yum. I was kind of nervous about the process, egg and all, but it worked out and came together to make a lovely meal. One day, I will have a fancy camera that will take pictures of all of my food without making it look like a ghost. Quick, easy, and cheap (if you keep things like parm and turkey bacon on hand).

Whole Wheat Carbonara-ish Spaghetti

8 oz whole wheat spaghetti
4 slices of turkey bacon, cut into 1 inch pieces
3 cloves garlic, minced
1 egg, beaten
1 egg white, beaten
6 tbl Parmesan cheese
salt and pepper to taste

Cook spaghetti according to package directions. Drain and set aside.

In a large pan over medium heat, cook bacon and garlic until bacon is crisp, stirring often. When bacon is crisp, add cooked spaghetti, eggs, and cheese. Remove from heat. Toss well to coat, making sure egg cooks. Serve immediately.

Serving size 1 cup

Earth Day (Mayhem Burgers)

Happy Earth Day! While my plans for today do not include planting a tree or purifying water, I did take the time to snip some roses for my kitchen window. Isn't that cute? I love those vases - loved them even more when I still had all 3 of them. Hand washing can be risky, everything doesn't always make it. My biggest hand washing tragedy to date was when the pot portion part of the crock pot slipped out of my hands and shattered on the floor. Thank goodness for Fred's. Posted by Picasa

I guess it could have something to do with Earth Day, considering that me hand making clothes keeps a factory from making them? And polluting the atmosphere? It's a stretch, but maybe. And taking this just over the top of cuteness is my new polka dotted wrist pin cushion from Etsy. I'm kind of obsessed with it and have considered wearing it as a fashion accessory. Perhaps tonight to Art Alfresco? Yes, I think so.
And now....some recipes. Two, in fact. This is what I made for supper last night and I can stamp both of these recipes non-WW peeps approved. Chef friend Nick named the burgers, I named the fries just to keep the theme going.

Mayhem Burgers

cooking spray
1/4 cup BBQ sauce
1 1/2 tsp hot pepper sauce (or to taste)
1.2 lb ground lean turkey
4 green onions, chopped
1/4 cup celery, chopped
1/4 cup dried bread crumbs, plain
2 tsp minced garlic
1/2 tsp salt
4 light wheat hamburger buns
2 tbl blue cheese, crumbled

In a small bowl, combine BBQ sauce and hot pepper sauce. In a medium bowl, combine turkey, 1 tbl of BBQ mixture, green onions, celery, bread crumbs, garlic, and salt. Using wet hands (to prevent sticking) form into 4 1/2 inch thick patties. Brush top of burgers with BBQ sauce mixture .
Heat large pan to medium high heat, spray with cooking spray. Add burgers, sauce side down to pan. Add BBQ sauce to top of burgers. Cook until done, flipping halfway through. Serve on a wheat bun with whatever dressings you like (just adjust points if necessary) and 1/2 tbl of blue cheese.

Serving size 1 patty, bun, 1/2 tbl of blue cheese

Sassy Fries

2 large potatoes, cut into strips
2 medium egg whites
3/4 tsp cumin
1/2 tsp chili powder
1/4 tsp black pepper

Preheat oven to 425. Spray a large baking sheet with cooking spray. Combine all ingredients, toss well. Spread fries on a baking sheet (be sure that the fries are not piled up on top of each other). Bake for about 15 minutes. Switch oven to broil, broil until crispy.

Serving size 1/4 of recipe

Chef Nick gave me some pointers on this one - don't crowd the pan and make sure that the egg whites are evenly distributed. When I made these, there were some baking issues. Good flavor, just odd texture. My advice is to just watch them.


A Subway Kind of Day (Turkey Meatballs)

Subway has saved me many a day on the WW. It's one of the few fast food restaurants where a point counter actually has options. However, some of the Subway goodies are still off limits for my point range. Example - a meatball sub. I know this could be considered questionable, considering the meatballs come from a large vat. Still good, though.
I recreated the Subway meatball sub last night. Meatballs paired with friends paired with outside dining almost made me forget that I had battled "the fever" the night before. I have gone back and forth with how to post this recipe. Do I post as written on the website? Do I post how I actually made it, which was probably higher points? I have come to that posting a "fake" recipe on a blog that is supposed to be about honesty and accountability would turn me into a total sham. Who wants that? Not me. No, thank you. Today's post will be all about the meatballs.

Turkey Meatballs
adapted from

1 lb lean ground turkey
1/2 cup Italian bread crumbs
1/4 cup grated Parmesan cheese
1 cup fresh basil (chopped)
1 egg
2 tsp salt
1 1/2 tsp Italian seasoning

Preheat oven to 350 degrees. Combine all ingredients in a large bowl (just take your rings off and dive in with your hands - much easier that way). Form into small balls - a little larger that a table spoon. Place on a foil lined baking sheet, coated with cooking spray.

Bake until browned, about 10 - 15 minutes. Shake the pan every five minutes to promote even cooking.

Serving size 24 meatballs
WW points 1 point per meatball

If one wanted to make meatball subs with these little darlings - use some type of wheat bread, about a tablespoon of tomato sauce, and some part skim mozzarella cheese. Layer it all together, cook in 350 degree oven for about 5 minutes.
More on Subway - I tried the subway breakfast this morning. I have been seeing the commercials and have felt like it is my duty, as a weight watcher, to see what this was all about. Not to shabby. I was a fan. I got the egg white western omelet for four points. It was something different, and felt like a treat. It was also inexpensive, a steal at 2$.

The Ill and Infirm (Broccoli and Cheese Soup)

I am a horrible patient. Horrible. I really do feel sorry for people that have had to take care of me in their lives - I'm sure it's a bit much. I have an annoying summer cold, including a sore throat, sore ears, body aches, and FEVER. I know as a kid I had fever all the time. However, as an adult, fever knocks me down. I knew the fever had hit when I was sitting in the Wal Mart parking lot waiting to meet my dad. I realized that I had the heat on as high as it would go and I still was shivering.

Speaking of Wal Mart, I decided that despite being ill and infirm - I should stop on by the Wal Mart. Not sure why - there was absolutely NOTHING in that store that I had to have immediately. I had it in my mind that I was going to pick up some ingredients for broccoli and cheese soup, throw it together real quick like, and then take it to the sick bed. No. That did not happen. I am proud to say that milk and Popsicles made it to the freezer - but the rest of the loot is still where I dropped it in the kitchen. Hopefully, the broccoli soup will get made for lunch. It's yummy and WW.

Broccoli and Cheese Soup

adapted from Cooking Light

cooking spray

1 cup chopped onion

2 garlic cloves, minced

3 cups fat free, less sodium chicken broth

16 oz broccoli florets

2 1/2 cups 2% milk

1/3 cup all purpose flour

1/4 tsp black pepper

8 oz Velveeta light

6 oz no yolks egg noodles

Heat a large nonstick saucepan coated with cooking spray over medium high heat. Add onion and garlic; saute 3 minutes or until tender. Add broth and broccoli mixture to a boil over medium - high heat. Reduce heat to medium; cook 10 minutes. Meanwhile, cook egg noodles according to package directions. Drain and set aside.

Combine milk and flour, stirring with a whisk until well blended. Add milk mixture to broccoli mixture. Cook 5 minutes or until slightly thick, stirring constantly. Stir in pepper. Remove from head, add cheese, stirring until cheese melts.

Place 1/3 soup mixture into blender, process until smooth. Return pureed soup mixture to pan. Add egg noodles.

Serving size 1 1/3 cups

A few words on this - the original recipe does not call for egg noodles. I added them because It makes it more like my mom's old school broccoli and cheese soup recipe (which is the complete opposite of WW). If one did not want to use noodles, just take them out. Serving size stays the same, points value drops down to 4.

Let the pitty party resume. Here is a few things that I would like to be doing, were I not sickly.

1. Go for a walk in this beautiful weather

2. Mulch my rose / hosta garden

3. Wander around down town Greenwood, stopping at Turnrow to get a new book.

4. Hop on Hwy 82 and go to Ackerman to score some sewing supplies

5. From there, head to Starkville to hang out with the rest of my fam

6. End the day in the Alluvian courtyard, sipping a glass of wine.

A lot to pack into one day i know, but since I'm not going to do anything - I can pretend like I would do everything. Alas, my day will be spent flipping back and forth between America's Next Top Model and HGTV while I roll around on the couch. They say that there is no cure for the common cold because the common cold is the cure. Chew on that for a minute.


Picnics, Pasta, and Pictures (LT's Pasta Salad)

Long day at work + not wanting to have anything to do with being in the kitchen + lovely day + 7 point chicken sandwich from back yard burger + picnic basket for a bridesmaid gift = one rockin' supper on the Yazoo River in Greenwood. Ahhhhhh. Oh so nice. I love the spring time. Brandon and I were able to sit outside by the river and enjoy our BYB with no mosquitoes. I'll enjoy it while it lasts, as soon we won't be able to see through the dark cloud that is a pack a Delta mosquitoes. Another good thing about the spring time...the easy, fresh food. Enter pasta salad, my favorite spring treat. This is a recipe I lifted from Laura T's blog. Its very yummy and very low in points. So low, in fact, that I recalculated it several times because I just knew that my non math minded self had made a mistake. Be prepared to share this with friends...it makes about a million pounds.
LT's Pasta Salad
1 lb sliced grilled chicken (I cooked mine in skillet with salt, pepper, and lemon pepper)
1 package whole wheat pasta (I used Barilla Plus Rotini), prepared according to package directions
1 lb asparagus, sliced into 1 inch pieces
1 cup grape tomatoes, sliced
1 cup fresh basil, chopped
1 cup fat free Italian dressing
salt and pepper to taste
Combine chicken, pasta, asparagus, tomatoes, basil, dressing, salt, and pepper in a large bowl. Refrigerate for a few hours before serving.
Serving size 1 cup

Pride and Crocking (Creamy Salsa Chicken)

Pardon me while I take a few minutes to raise the roof....ok, I'm done. I completed a sewing project today and had two exciting successes.
1. I did not sew the bloomer ruffles onto themselves.
2. I did not sew the front of the t-shirt to the back of the t-shirt.
Kind of a big deal, and I'm kind of excited.
How cute will Baby A be in this little outfit? So exciting.
Today was my day off and I must say that I enjoyed it. Got some sewing done (obviously), finished up lecture notes for my class tomorrow night, and ran my beast of a vacuum. None of this may sound like much fun to anyone else, but to me - it was blissful. Total nerd alert, I know, but I'm over it. It's the simple things in life that make me happy.

Mondays are my weigh in day for WW. This really is a bad day, considering that a lot of my cheating occurs between Thursday night and Sunday afternoon. This weekend was no different considering that if I get within 20 miles of Gino's, consider this girl there. Eating a chili and slaw burger with cheese. Oh yeah. Back to the weigh in, it wasn't cute OR funny. In an effort to go forward instead of backward I decided to try out a new recipe. I went back to old faithful (a crock pot meal involving shredded chicken). I know I said a few weeks ago that the crocker was going up for the summer, but that was a lie. I just can't seem to part with the old girl. This is another one that I found while cruising the WW message boards - I hope you enjoy it as much as I did!

Creamy Salsa Chicken

1 lb chicken breast
1 can corn (drained)
1 can black beans (drained)
1 can rotel
1 cup salsa
8 oz fat free cream cheese

Combine all ingredients in a crock pot and cook on low for six hours. About thirty minutes before you eat it, remove the chicken, shred it up, and return it to the pot.

Serving size 1 cup

I had this with whole wheat tortillas (the ones I get are 2 points a piece). I had a half a cup in each tortilla bringing the grand total of the meal to 8 points. Very filling, which is always a good thing. Other users on the WW website suggested to eat this over brown rice. I'm sure that's good and if I can ever master the art of cooking rice, I'll give it a try.

Highlights (Hawaiian Pizza)

This weekend was great. Nothing like a good weekend back home, coming together to celebrate something cool. Although short, it was packed with many a highlight. Let's discuss...

1. Pedicures. Friday afternoon, after the bridesmaid's luncheon, my two friends Anna and Nikki and I went out in search of a mani/pedi. This is something that I totally should have taken care of in Greenwood, considering that the Alluvian spa is here AND I had a free mani/pedi there - but last week was busy so oh well. We were totally shot down on our first try - one nail lady never got up from the couch to help us (she was napping, i guess), the other one said "I have someone at two!" more times than necessary and never made eye contact. They recommended we go to the mall. I, however, said let's not do the mall - let's go by Kroger. Yes, Leah said don't go there, no I didn't listen. I'm still recovering from the trauma from this so I won't go into detail. However it is worth mentioning the following information: the bubbles in my foot bubble bath were created by a few squirts of Neutrogena Oil Free Acne Wash; the man used a cheese grater on my heels, the women in charge of nails had fried rice on her shirt, and it cost me 30$. Oh - and it was chipped an hour later.

2. Beauty. One very cool thing about the weekend was getting my hair did. Leah brought in the folks from the Checkered Flag in - i must admit I was a little nervous at first. However, it turned out lovely. My personal favorite was this exchange between me and Deena.

LM (stunned): Wow! I have never had this much volume in my entire life!

Deena: Girl. You have no idea how big I could make your hair! Seriously.

I spent the next few minutes dreaming of big hair and seriously considering a late afternoon drive back to Leland to see just how big my hair could get. This weekend was also the weekend that I discovered a love of coral lipstick. More on that later. Hair and lipstick pictured above.

3. The Big Show. The wedding of Leah and Judson was the reason for heading to the 'Ville this weekend. I cannot say enough about it. It was absolutely beautiful - from ceremony to food to music to flowers - it was all fantastic. Leah was a beautiful bride, Judson a handsome groom. May they have many many many happy years! Aside from getting Leah and Judson married off, the weekend was also great chance to get to spend time with friends. I have amazing friends, i cherrish the moments we have together. Hopefully more pictures to follow. Unfortunately most of them are still on my mom's camera in Greenville.

In closing - here is a recipe. I've been spending time on the WW Message Boards (nerd alert) and someone mentioned making this. It was very easy and quite good. Nothing like some pizza to kick off the week.

Hawaiian Pizza

1 can pizza dough ( I used Pillsbury classic crust)
1/2 cup light spaghetti sauce
1 cup fresh pineapple
30 turkey pepperonis
1 1/2 cup part skim monzerella

Preheat oven according to directions on pizza dough.

Spread out pizza dough on cookie sheet. Spread sauce evenly on pizza dough. Place turkey ronis atop the sauce, then pineapple. Sprinkle cheese evenly atop the pizza.

Cook according to package directions (I cooked mine at 425 for about 13 minutes). Allow to set for a few minutes after cooking. Divide into six pieces.

Heading to Leland today to kick off the wedding weekend of my long-time, dear friend Leah. Her and Judson will be makin' it official and a good time should be had by all. Looking forward to spending time with old friends!

Skinny Enchies

There are lots of things that one misses when they make a big change in life. Example - after starting WW, I deeply missed all of the amazing, full fat casseroles that I often made. My personal favorite for a while was Creamy Chicken Enchiladas. It was a recipe of my mom's and whoa, it was so good. Fast forward some years to when Brandon and I discovered Paula D's version of Chicken Enchiladas. Very similar, just add 17 more cups of cheese and heavy whipping cream. We ended up combining the two recipes and created a meal that could make you cry and stop your heart, all at the same time. Alas, there comes a time when one has to give up the full fat casseroles. Not that I don't cheat on points, I totally do, but it's hard for me to justify cooking an entire meal that in no way resembles the WW.
Imagine my joy when i discovered a recipe on the WW website for Cheesy Chicken Enchiladas. I was ELATED. Even more ELATED when they actually turned out to be good! Here is my version of them - which I have lovingly named Skinny Enchies. Only because I think that's cute.

Skinny Enchies

8 oz reduced fat Velveeta
1/2 cup fat free sour cream
1/4 cup fat free evaporated milk
5 green onions, chopped
1/4 tsp ground red pepper
3 cups cooked chicken, shredded
6 whole wheat tortillas
1/4 cup low fat sharp cheddar cheese

Heat oven to 350 degrees. Coat a 9 inch baking dish with cooking spray.

Combine Velveeta and sour cream in a microwave safe bowl, cover with plastic wrap, heat until melted (about 3 minutes). Transfer 1/2 of cheese mixture into a small bowl, add in evaporated milk, set aside. To the remaining cheese mixture, add chicken, green onions, and red pepper.
Fill each tortilla with a little shy of 2/3 cup of chicken/cheese mixture. Wrap them, place them seam side down in baking dish. After all tortillas are stuffed and wrapped, top with the cheese/milk mixture. Sprinkle cheddar on top.

Cook until all cheese is melted, about 20 minutes. Serve with salsa.

That was me stress eating. This is me holding myself accountable for said stress eating.

I confess.

After all the months of point counting, not to mention the several years spent working to hone my craft of therapy, I still get EXTREMELY rattled with stressful situations. My first instinct is usually to eat. I have been in the hospital all day and most of the night with Brandon. Nasty case of the appendicitis. He had surgery this morning and is doing much better now.

But still.

It's a hospital. And someone that I care about deeply is in pain. And this chair is uncomfortable.

So I eat.

So I'm working to do something constructive to keep myself from wandering back up to the fifth floor (to the vending machine). I decided I would tell on myself. Then I'm going to research WW Comfort Food Recipes.

Tomorrow is always another day. There's an old saying that says you will keep experiencing the same situation over and over again until you learn what you are supposed to learn. I must admit, when the doctor came into Brandon's room this morning and said "You're the lucky guy! It's appendicitis!" I looked at him strange, immediately created the worst possible situation in my mind, and muttered some unfriendly words under my breath. Then he looked at me and said "Hey - this could be so much worse." Dang. I hate it when complete strangers totally call me out. When I can get my head around it, perspective helps me more than anything. When I can't get my head around perspective, tis not a pretty thing.

Keep calm and carry on.

Does anyone else act nutty when they get stressed?


Sweet Reunion

Happy Easter to all! I've had a lovely holiday. I attended not one, not two, but THREE church services (whew!) and got to see a gaggle of family that I just don't see enough. Here are just a few pictures of the weekend. My favorite one is the last one. Jen and BJ were in Washington DC over the holiday - I took Alex to meet them in Carrolton for a baby trade. She was more than fired up to see mom and dad and I think this is just the cutest picture.
No recipes today. My step-mom informed me up front that Easter lunch was in fact, not, a WW friendly meal. I had already figured it out, seeing as how there was mac and cheese, asparagus casserole, and iced brownies. We did sit outside and sweat a little, so maybe some calories were burned? Guess I'll be shreddin' it tomorrow. Twice.
I guess it is worth mentioning that I'll be having leftover pork tenderloin for supper. When I informed my dad that I would be taking some stuffed eggs with me (for Brandon, of course) he also loaded me up with a pound of pork tenderloin. Simple and delish! Thanks dad! Pork tenderloin is pretty good for WW - 3 oz for 3 points. Happy week! Hope everyone has a good one!

Whole Lot of Nothingn (Chicken Parmesan)

I require a lot of down time. Like, a WHOLE lot. I cherish my weekend mornings and get a bit cranky if I don't get enough couch / coffee / staring at the wall time. This is just one of the reasons that I love a long weekend. I'm on day two of a four day-er. Good Friday yesterday and starting this week, our office is going to a four day week, which makes me off on Monday. This freaked me out at first, seeing as there will be a pay cut involved AND an entire stretch of day with nothing to do. However, I'm becoming OK with it and realizing that today I don't have to bust it all out (laundry, groceries, cleaning house, etc) today - I can do stuff on Monday! YES! So today I chill.

Kallie and Win were in town and a fun group of us went to Luscos. WW it was not, but delicious it was. Much of Friday was spent resting from Thursday, staying up late visiting and all. I did get a dress for Alex made - it was actually pretty easy to make. I only had to get the seam ripper after it twice. Other big Friday activities included cleaning out the car and date night with Brandon at Delta Bistro. I also finished a book - Jodi Picoult's Change of Heart. It was intriguing throughout, but had a horrible ending. Or maybe I was just SO TIRED that i accidentally skipped some pages OR totally just didn't get it. I'd spend your time doing something else. Like making WW Chicken Parmesan.
This is Brandon's favorite WW meal. It is very good, but is pretty labor intensive. It involves chicken, more specifically pounding chicken breast to 1/2 an inch thickness. This totally gets me and I complained about it the whole time I did it. How's that for a joyful heart? Anywho - try it out. It's good.

Chicken Parmesan

29 oz canned diced tomatoes, with Italian herbs
1 tsp Italian seasoning
1/2 tsp dried basil
1/2 tsp dried oregano
1/2 tsp black pepper
1 tbl sugar
1 tbl balsamic vinegar
1 lb uncooked boneless, skinless chicken breast (four 4 oz pieces)
1/2 cup Italian seasoned bread crumbs
4 tsp olive oil
cooking spray
3/4 oz part-skim mozzarella cheese
1/4 cup grated Parmesan cheese

Combine first five ingredients in a large saucepan. Bring to a boil; reduce heat, and simmer, uncovered, 35 minutes. Stir in sugar and vinegar; simmer 5 minutes

Preheat oven to 350 degrees.

Place each chicken breast between plastic wrap; pound to 1/2 inch thickness. Dredge chicken in breadcrumbs.

Arrange chicken in baking dish covered with cooking spray. Pour tomato mixture evenly over chicken, and sprinkle with cheeses. Cover and bake at 350 for 35 minutes. Let stand for five minutes.

Serving size 1 chicken breast, 3/4 cup of tomato mixture, and 1 ounce cheese mixture

I usually serve this with whole wheat pasta. Just be sure to adjust the points value!
