Biscuits in my Enchiladas (Biscuit Enchiladas)

I feel like everything is better with a biscuit, including enchiladas. Biscuit Enchiladas? Yes, please. There is nothing wrong with that.

Quick, crowd pleasing, cheap, comforting - perfect for the rush of the holidays. 

Biscuit Enchiladas

1 lb lean ground beef (93% lean)
1 onion, chopped
1 tsp taco seasoning
1 (10 oz) can enchilada sauce
1 (8 oz) can tomato sauce
1 can reduced fat biscuits (I used Grands Reduced Fat Buttermilk)
1 cup WW Mexican shredded cheese

Preheat oven to 350 degrees.

Combine ground beef, onion, taco seasoning.  Cook.  Stir in enchilada sauce and tomato sauce.  Take biscuits (uncooked) and quarter them.  Stir biscuits into meat mixture.  

Place meat mixture into lightly sprayed baking dish.  Bake for 25 minutes.  Remove from oven, sprinkle cheese on top.  Bake for another five minutes.  

Remove from oven and let stand for 10 minutes.  Cut into either 6 or 8 squares. 

Serving size 1 square
Points Plus 11 for six servings; 8 for 8 servings 

*Can also use ground turkey; may affect points value!
