This one took a few minutes to put together this morning. It's not as easy as, say, a Nutrigrain blueberry waffle, but it's much tastier and quite filling. You know what else you could do? You could have breakfast for supper with this. How good is breakfast for supper?? Love it.
Potato, Egg, and Cheese Breakfast Bowl

1/2 of a baking potato, diced up small
3 egg whites
1 green onion, chopped
1/4 cup salsa
1 slice of 2% American cheese
Spray a small pan with spray butter, add potato. Season with salt to taste. Allow to cook until soft and brown in some spots.
Remove potatoes from heat once cooked, set aside. Spray same pan with cooking spray, add egg whites. Scramble until done. Add to potatoes, along with green onions, cheese and salsa. Allow cheese to melt.

When having this for breakfast I will put everything together once its cooked in a tupperware container. Once I get to work, I will warm it up in the microwave and dig in.
