I like a lot of her recipes because they are relatively simple while still being tasty, don't call for crazy ingredients, and are, for the most part, healthy.
This was one that required minimal alterations to become more WW friendly. It was quite tasty and a step up from the usual turkey joes that I make. They require a bit of preparation but get in that kitchen and get your chop on!
Sloppy Jerky Turkey Joes
adapted from Rachael Ray
1.2 lb extra lean ground turkey (1.2 lb is the size of the package I always get)
1 tbl vegetable oil
1 onion, chopped
1 Anaheim pepper, seeded and chopped
3 cloves of garlic, chopped
salt and pepper
1 tbl paprika (or smoked sweet paprika)
1 inch piece fresh ginger, grated or minced
1 tsp allspice
1/2 tsp ground cinnamon
1/8 tsp freshly grated nutmeg
2 tsp dried thyme
1/4 cup chopped fresh cilantro
2 tbl cider vinegar
2 tbl dark brown sugar
1 tbl Worcestershire sauce
2 tbl lime juice
1 cup tomato sauce
Spray pan with cooking spray. Add turkey, cook until done. Add vegetable oil, onion, both peppers, garlic, salt and pepper, paprika, ginger, allspice, cinnamon, nutmeg, thyme, cilantro. Cook for about 8-10 minutes, stirring occasionally.
Meanwhile, combine ingredients for sauce. Add to meat mixture, allow sauce to heat through.
Serving size approx 1/2 cup (makes about 11 cups)
