Identifying Support

No recipes today. I'm in the middle of memorial day weekend and preparing to go to a cookout - it's not going to be very WWish and I would feel like a sham if I even acted like I was eating on the plan today. I will, however, give it my best effort to be aware of portions.


That being said...let's discuss support. I have been lucky enough to score a really cool part time gig in the last few months. I am working as the behaviorist for a weight loss program here in town. My job is to lead educational groups aimed at exploring the emotional side of eating / weight loss. I have really enjoyed it and have been re-introduced to some ideas that I often forget about. Things like managing stress, identifying triggers that make you eat, and being aware of your support systems. A few weeks ago, the topic was support. Support is key when making any type of life change - I've found it to be especially helpful with loosing weight. With tomorrow being Memorial Day, I'm filled with all kinds of gratitude for all kinds of things (example - living in country where I have enough food to eat that it made me have to start WW). I'd like to take a minute to holla' at a few of my main supports.

1. My family. I have a pretty cool family and they have all been extremely supportive of me. My mom, who has ALWAYS told me that I was beautiful no matter what, has been nothing short of ecstatic with my weight loss. I'm lucky...she has never been overbearing and guilted me into doing anything and she purchased me many cute outfits when none of my clothes fit any more. Thanks mom! Can't forget about dad. Whenever I'm in Greenville for Sunday lunch - he always makes sure that he picks up some grilled KFC and green beans in addition to the bucket 'o fried chicken. Sometimes i really want that friend chicken, but in the end I'm always glad that he is interested enough in my success to bring along some grilled. My sisters - Jennifer and Chick - are a natural support system. Jennifer is a huge support of the blog and is a big sharer of recipes and tryer of the ones that I post. Chick says things like "You look hot, Minya" and other uplifting things that make me want to keep going. She is also a big supporter of the blog - sharing recipes and the like . MaryStraton, my cousins wife, good friend, and fellow blogger is quite possibly the queen of the WW. When I first started the plan, she patiently responded to all 47 panic stricken emails I sent her when I had absolutely no clue what to put in my mouth. Thanks, girl. Like I said - all of my family is a HUGE support and I am thankful for every single one of them! Love to you all!

2. My Friends. Just like my family, my friends are pretty cool as well. Before I lost weight - I constantly wanted to throw a double cheese burger at Lindsey. The girl is more motivated to exercise than anyone I've ever seen and will randomly do Pilates moves while she's talking to. After I started loosing weight, and still to this day, she has been one of my biggest motivators by constantly working to inflate my self esteem. She's a squealer, and while it sometimes makes my ears ring, it makes me feel great when she says, no...squeals, that she thinks I look good. It still freaks me out a little, which of course she realizes. She's also queen spell checker. Thanks, ghi. Win, who has been my close friend since out St. James days, is another big sharer of recipes and encouragement. She's a great person to vent to when I really want to skip my weigh in. Again, thanks ghi. Again like family, there are many other amazingly supportive and beautiful friends that I have that have made this all so much easier.

3. My man. I'm pretty luck to have Brandon. He has always told me that he thought I was perfect no matter how big or small (perfect - that's a stretch) i was. He has suffered through removing butter and beef from most recipes and from my constant whining in the beginning about how i was pretty sure that I was going to starve to death. Thanks, B.

So there it is, my list of support. Writing this reminds me again of how lucky I am to have support. Do you have support? For whatever you're trying to do in life? I hope you do. It can help to identify them specifically and exactly how they help you. I hope this blog supports you...I know it has been a support to me. Keeps me in line. Sometimes it has a very big brother effect on me and I think that if I cheat, the entire world wide web will see it and shake their heads in disappointment. That's strange, isn't it? Whatever...it helps.

It's In the Sauce (Italian Sausage Red Sauce)

I have a long and semi-tortured relationship with pasta sauce. Or is it pasta gravy? I'm not sure. What I am sure of is that it's divine and always satisfying. Well, maybe not ALWAYS divine. Enter the tortured part. I have had more than a few disappointing pasta sauce events. Once was when I first started WW and made a turkey meatball / sauce ditty. It was an absolute disaster and I swear I would never make meatballs again. Luckily, I've made my peace with meatballs and have since had success. Another disaster occurred when Brandon wanted to make homemade sauce. I spent probably 4 hours blanching tomatoes, pealing tomatoes, dicing tomatoes, simmering sauce. After all of that, one would think I would have good results. Of course not. It was awful. Such a disappointment. I'll stick to jarred sauce, thank you. Say what you want to say about jarred sauce - I have no problem with it. Don't get me wrong. I would LOVE to spend half a day making my own sauce using fresh tomatoes from my garden and my grandmothers secret recipe. However, I can't grow a tomato to save my life and as far as I know, neither of my grandmothers have a secret sauce recipe.
I decided to give the 'ole sauce another try tonight (with a jarred sauce as it's base, no doubt.) It all started when I got the idea to make a Polenta dish. I don't really know what Polenta is but I know I wanted it. Well, of course, no Polenta could be found at the Greenwood Wal-Mart. Or maybe I wasn't looking in the right spot. Completely possible. Since I already had everything needed to make the sauce portion of the dish, I just decided to wing it. So very glad it worked, this is one of my new favorites!

Italian Sausage Red Sauce (or Pasta Gravy)

1 package (20 ounces) lean Italian turkey sausage (casings removed)
1 medium onion, chopped
2 tsp minced garlic
1 handful of fresh basil
2 tbl rosemary
1 jar (about 3 cups) light tomato sauce (i used Ragu no sugar added basil and tomato sauce)

Heat a large pot over medium high heat, spray liberally with olive oil cooking spray. Add sausage, onion, and garlic. Cook until done.

Add basil, rosemary, and sauce. Bring to a boil. Reduce heat to low, cover, simmer for at least an hour.

Serving size 1/2 cup
WW points 3

Serve with whole wheat pasta sauce and a few shaves of parm (adjust points).

It's gettin' hot in here...(Creamy Corn)

Dang, it's been a HOT weekend. Sweltering, even. Despite the heat, it was a fun one. A friend of mine married in Oxford and I had a great time hanging with friends. That being said, it's tough to look cute when you're mopping your forehead with a napkin. At least I wasn't the only one.
Back to the heat. It makes me so lazy, not to mention easily agitated. I go through this at the start of every summer; it will take me a few weeks to adjust to it. My weekly meal planning / grocery trip was not even close to enjoyable and was made even worse by the fact that (a) the woman at the check put about 25 items in 23 different bags and (b) I had to check out 3 separate times due to forgetting things. It's the heat, I swear. Not surprisingly, I have not come up with many exciting meals for the week. In fact, there will be several repeats.
Tonight was an old favorite (Southwestern Turkey Burgers) and a new kid on the block (Creamy Corn). The creamy corn was pretty good. Not quite as good as the classic creamed corn with a ton of butter and cream, but it holds its own. And it's not overly complicated. That's nice for I'm having a heat induced meltdown.

Creamy Corn

2 tsp butter
3 green onions, chopped
2 1/2 frozen corn (do not thaw)
1 tbl flour
1 cup fat free milk
salt and pepper, to taste

Melt butter in a medium sauce pan. Add scallions, saute until soft (about 1 minute). Add corn, saute for about a minute. Add flour, toss to coat. Add milk, salt, and pepper. Bring to a boil, reduce heat to a simmer. Simmer for 10 - 12 minutes or until thick.

Serving size 1/2 cup

Friday!

Howdy!

Is anyone else so fired up that it's Friday? I know I am. It's cloudy and rainy here in Ruleville which is leading to a lot of random Internet surfing. Internet surfing, for me, always leads to a case of the wants. I have already purchased a new swimsuit from Wal - Mart (inspired by this adorable post) and am toying with the idea of running to Cleveland this afternoon to try on a pair of jeggings that I can't stop thinking about. This is what I'll usually do when thinking about a clothing purchase. I'll stalk it out, try to put together as many outfit combinations as I can, then I'll finally buy the piece. But jeggings? I don't know, now. I'll need several new tunics and possibly a new pair of flats. Please - someone take me shopping and make these difficult decisions for me.

Moving on through my list of wants...new music! My ipod is (no lie) five years old. A lot of my music on the i-tunes is also that old. I'm bad to get into a music slump, throw my hands up, and just listen to NPR for 6 weeks straight. However. My goal for this weekend is to make a mix CD (full of new T.I. I might add) and purchase the new Black Keys album, as well as the Sleigh Bells LP. I feel so hip when i use words like "LP."

In food news....Earth Grains Thin Buns are my new thing. I realized middle of the week that if I ate one more Lean Cuisine I would have a complete and total melt down. So i told myself that I would just have a Morning Star Farms black bean burger (2 points) for lunch one day. That's pretty crazy town. Me and my ravenous appetite needed more. Thankfully, a co worker had picked up a bag of thin buns and was gracious enough to share one (as well as a slice of fat free cheese). The thin bun was 1 point, the burger was 2, the cheese was 1. All in all, a very satisfying 4 point meal. Mmmmmmmm.

A Real Meal (Hamburger Steak & Sauteed Summer Squash)

I love my new cookbook. Really, I do. I love how easy it makes it to plan and put together a hearty, nutritious meal. Last night's supper was a rare occurrence for me - it actually felt like a square meal, with a meat and a vegetable. I don't know what I usually cook, but it's often not a square meal. Both of these recipes are from the Weight Watchers 5 Ingredient 15 Minute Cookbook and the entire meal was 7 points. Enjoy! I know I did.

Hamburger Steak with Caramelized Onions

1 lb ground sirloin
1/4 tsp salt
1/4 tsp pepper
1/4 tsp Italian seasoning
cooking spray
1 medium onion, thinly sliced
1/2 cup beef consomme
1/4 balsamic vinegar

Combine first 4 ingredients in a small bowl. Shape into 4 (1/2 inch thick) patties.
Heat a large skillet over medium-high heat. Coat pan with cooking spray. Add patties, cook about four minutes on each side or until browned. Transfer patties to a platter and keep warm.
Add onion to pan, spray with cooking spray. Saute over medium high heat for 4 minutes. Return patties to pan. Combine consomme and vinegar; pour over onion and patties. Bring mixture to a boil; reduce heat cover, and simmer 5 - 6 minutes or until meat is done.

Serving size 1 patty and 6 tbl onion mixture

Sauteed Summer Squash

1 tsp olive oil
2 small zucchini, sliced
1 yellow squash, sliced
1 tsp Greek seasoning

Combine all ingredients in a medium pan. Cook 4 - 5 minutes or until browned, stirring occasionally

Serving size 1/2 cup
WW points 1

The full meal....hamburger steak + 1/2 cup white rice + veggies = 7 points. Woo!


Just a few words on this one - i could not find beef consomme (shocker) so i used beef broth. It was fine, just a little thin. Also - all i have is raspberry balsamic vinegar. This is random, I know. It's even more random that this is like the 6th recipe that I have had to use raspberry balsamic vinegar instead of plain so I should probably just give in and get some regular. Don't you think?

Gowns and Gorp

Gorp, anyone? No, I don't really know what that word even means. I came across the "recipe" in a small cookbook of one and two point WW treats. I am a girl that loves a treat, especially a low point one. My complaint about this one is the small serving size (1/3 cup) and the fact that it is 2 WW points. However, it is very good. I went on the lake this weekend with dear friends and it proved to be a very good snack. I know it gave me the energy to survive the loooooong trek from the MS river to the Outing Club IN THE RAIN. I swear - if i get anywhere near that river it starts raining. Interesting fact - Asian Carp are made uncomfortable by the sound of a boat motor and will attempt to fling themselves into your craft. Scared the hell out of me.

Gorp
from WW Tasty To Go Treats

2 1/2 cups Wheat Chex cereal
1/2 cup unsalted almonds
1/2 cup dried cherries
1/2 cup sweetened dried cranberries
1/2 cup dried blueberries
1/2 cup semi sweet chocolate chips

Combine all ingredients in an air tight container.

Serving size 1/3 cup
WW points 2

As i said, the points were a little high for me. However, I do think it's something good to have around the house - good to have for company, kids, etc.

In sewing news, I recently purchased this book after it was recommended to me by the staff of Ella Rose. I must admit that I was hesitant to stray away from children's clothing and the occasional curtain to make things for my self. I heard my Mom's voice over and over in my head asking...."Laura Merrill. You aren't going to start sewing all of your own clothes are you? I just don't want you to look hokey." Truthfully, she had every reason to worry. Not only do I struggle at times to dress myself, I am also painfully cheap when it comes to buying clothing. For these reasons I have stayed away from sewing for myself out of fear of turning into a plaid Simplicity patterned nightmare. Just because it has the word "vogue" in it doesn't make it cool. Anyway. I stumbled upon this little pattern for a nightgown. I enjoyed making it and despite accidentally cutting it in half - am proud of the way it turned out. Is there a tunic in my future? Yes. Yes there is.

Compromise (WW Pizza)

Does this look a little odd to you?
Yes. It does. This is one WW person compromising with a non WW person. Brandon joined me for supper - I decided that, being the sweet girlfriend that I am, I would put a little extra cheese on 1/3 of it - so he wouldn't feel like he was being deprived. Not that he ever complains of feeling deprived - he happily gobbles up most WW meals that I make. Just compromising. Not that it needed the extra cheese - again, just because i'm a nice girlfriend. And because he's a sweet boyfriend. AWWWWW.
Last night's supper was WW Pizza. Nothing fancy, something that mom mom made for years. We ate it, not because we were counting points as a family but because it tasted good. The recipe has long since disappeared so I made it last night as I remembered it.

Classic WW Pizza

1 tube of pizza dough (I used Pillsbury Classic Crust)
1 lb extra lean ground turkey
1 medium onion, chopped
1 tbl Italian seasoning
1 small can tomato sauce
1 cup part skim mozzarella cheese
Spray a baking dish with cooking spray. Unroll the pizza crust into the dish. Preheat oven according to package directions.
Cook turkey, along with onions and Italian seasoning (and maybe some salt and pepper if you fancy) until done. Add the tomato sauce and let it simmer for a few minutes.
Pour the turkey mixture over the pizza dough, allow to cool for a few minutes. Sprinkle cheese evenly on top.
Cook according to the directions given for cooking the dough (I cooked mine for 17 minutes). Remove from oven and let cool. Divide into six pieces.
Serving size 1 piece

Next time, I will add some turkey-ronis and some onions and bell peppers on top - Just to jazz things up. It is so good.

And it was even better, I feel, eaten outside in the driveway / patio (I rent, don't judge.)

In enjoying the outside before it gets insanely hot and mosquito ridden news, Brandon purchased a corn hole set from Big Lots yesterday. If you live in the area - come join us for a round! I'm warning you though, I'm really bad. You should NOT volunteer to be on my team.

Stir It Up (Stir=Friend Shrimp and Vegetables)

In an effort to expand my cooking catalogue, I decided to add a little stir fry to the mix. Things like stir fry have always blown my mind. A few months ago, when traveling back and forth to Amory for work, I was lucky enough to have my ever talented (step) brother cook dinner for me in Oxford. (I have to throw the step in because, well, that's what we are - but that's not what I consider him. I consider him a true brotha. But I digress.) He made a simple vegetable stir fry. I was excited after several weeks on the road and waaaay to many drive throughs McDonalds in a pinch. It was so good. The vegetables were exactly what I needed. I asked him how he did it and he was all like "Ah - it's so simple! Just throw some stuff together!" I need much more direction than that. How lucky I felt when I dusted off my old (from WW round 1) copy of the Simply Delicious Fexpoints Cookbook and found this recipe. I hope you enjoy it! It was even good as lunch the next day.

Stir-Fried Shrimp and Vegetables
from Simply Delicious Flexpoints Cookbook

1 tbl cornstarch
2 tbl reduced sodium soy sauce
1 cup low - sodium chicken broth
2 tbl finely chopped peeled fresh ginger
1/4 tsp crushed red pepper
1 tbl Asian (dark) sesame oil
3 garlic cloves, minced
2 tbl sesame seeds
5 cups broccoli florets
1 red bell pepper, seeded and cut into strips
1 yellow bell pepper, seeded and cut into strips
1 bunch scallions, cut into 2 inch lengths
1 lb large shrimp, peeled and devained
3 cups cooked brown rice

Combine the cornstarch and soy sauce to a smooth paste. Stir in the broth, ginger, and crushed red pepper.

Heat a large nonstick skillet (or wok, if you have one. I don't.) over high heat. Swirl in the oil, then add the garlic and sesame seeds. Stir fry until it smells good, about 30 seconds. Add broccoli, bell peppers, and scallions. Stir-fry for about 4-5 minutes. Add the shrimp and stir-fry until just opaque in the center and the veggies are tender crisp (3-4 minutes).

Stir the cornstarch mixture into the pan and cook, stirring constantly, until the mixture simmers and thickens, about two minutes. Serve with rice.

Serving size 1 1/3 cup shrimp mixture and 1/3 cup of rice

They Grow Up So Fast (Black Bean Salsa)

Over the weekend, this precious child graduated with her bachelors degree, putting her one step closer to becoming a pharmacist. WHAT? My little sister is almost a pharmacist? Whoa. This is Chickey as a little chick - not sure how old she was but I know that those overalls are amazing. And that hair-do has second day pink sponge rollers written all over it.
I am 5 1/2 years older than Chickey and thankful that we have always been close. (Except for the few years that she did not drink anything with ice in it because I told her she would die if she did. And the time that I locked her in her bedroom closet during a storm, trashed her room, and told her that a tornado had just been through it. Or the time that she and her friend destroyed the LAST tube of Jane by Sassiby's "Smashing Pumpkin" lipstick. It was orange, and I was mad.) I am very proud of the woman that she has become. This Chick is driven - yet kind and compassionate. Loves her family and her friends, loves Starkville, and is smart as a whip.

Here she is, enjoying her new graduation Alex and Leo bag (tutorial to make it here). The night was great and a good opportunity to get to hang out with family. Mom was smart enough to bring a quilt to the graduation - the ceremony was in the Ole Miss practice complex so the entire building was covered in AstroTurf. After Chickey turned her tassel, Alex and I retired to the back of the room and practiced pulling up and crawling. Cutest darn thing I ever saw.


Yes, a large time was had by all.







Also - a big 'ole happy Mother's Day shout out to all the mom's out there. I know I'm the luckiest daughter in the world to have a mom like Pegs. And how cute is this new mom...enjoying her first mother's day this year.


All of this family time involved some serious eating. It only made sense to come home this afternoon and try to make something that did not involve a cream sauce. How about black bean salsa? Recipe tweaked from one by Chickey - she's pretty much owning this post.

Black Bean Salsa

16 oz black beans (rinsed and drained)

16 oz corn

one handful fresh cilantro

1/2 cup lime juice, chopped

4 green onions, diced

1 tbl olive oil

1 tbl cumin

1 tomato, chopped

salt and pepper , to taste

Combine all ingredients. Refrigerate before serving.

Serving size 1/2 cup

Like any salsa, this would be great with a baked tortilla chip. However...i have full intentions of eating 1 cup of this with a spoon for a mid afternoon snack tomorrow.

Busy Breakfast (Breakfast Sandwiches)

Can this girl rock a head lamp or what? This is my friend Clare, trying to figure out if the catfish was ready on the grill or not. I had dinner with her and her family Thursday night - I'm looking forward to recreating this meal in a more WW friendly form. Grilled catfish and grilled vegetables? Yes, please. We also had jalapeno poppers WITH reduced fat cream cheese and turkey bacon. Yep - grillin' season is here. Maybe this will be my year to figure out how to actually use the grill. Just maybe.
Couple of goings on - gearing up for a big trip to Oxford today. Chickey is having her first of many graduations from pharmacy school. So proud of her. And looking forward to getting to spend time with the family. Many pictures of this to come.
I'm gearing up to start my new job on Monday. I will go from a 10 minute drive to work to a 35 minute drive to work. I'm trying to think of how many things I can (safely) do in the car on my way to work. I've decided I can do the following: let my hair air dry, get my daily news on the CNN radio (I'll be missing the Today show!), drink my morning coffee, and eat a yum breakfast sandwich. Would you like to eat a yum breakfast sandwich on the way to work? Well - here's the recipe. Win has been all over this blog this week - this one is hers, too!

Turkey Breakfast Sandwich
from Win

1 lb turkey breakfast sausage (casings removed)
1/4 egg beaters
1 cup Weight Watchers cheese (i use Mexican)
1/2 onion, chopped small
whole wheat English muffins

Brown sausage and onion in a medium pan sprayed with cooking spray. Combine cooked sausage and onion, egg beaters, and cheese.

Split English muffins in half. Divide the sausage mixture evenly among English muffin halves.

Cook in a 400 degree oven for 20 minutes.

Serving size 1/2 of English muffin topped with sausage mixture

I prepare a batch of these, wrap them individually in foil, and put them in a zip lock in the freezer before cooking them. I pull them out and cook them one at a time - which makes them perfectly easy for an on the go breakfast. Nice!

Taquitos!

Happy Cinco de Mayo! It's a great day to make TAQUITOS!! I made these for supper on Monday night. For all of you mothers out there...a friend of mine was there and her son (who is around 19 mos old) ate the heck out of these.

Taquitos
adapted from Hungry Girl

8 small yellow corn tortillas
10 oz shredded chicken breast
1/2 cup salsa
1/3 cup fat free shredded cheddar
1/2 tsp taco seasoning mix
optional: fat free sour cream, additional salsa for dipping

Preheat oven to 375. Combine chicken, salsa, cheddar, and seasoning mix. Stick it in the fridge for a bout 15 minutes. Meanwhile, wrap corn tortillas in moist paper towels, heat in the microwave for 1 minute.

Working with one tortilla at a time, take approximately 2 tbl of chicken mixture and and spread it on the tortilla. Roll up, secure with a toothpick. Place in a well greased baking dish. Repeat with rest of the tortillas.

Bake for 14 - 16 minutes or until crispy.

Serving size 2 taquitos

The original recipe called for canned chicken. I just couldn't do it. Just couldn't. I'm sure it's fine but I have pre-existing chicken issues and just couldn't do it. However, if using canned chicken - use 10 oz 98% fat free, drain it real good, and drop the points value down to 4.

Just some thoughts on this Tuesday night. I should mention, for the record, that it is waaaaaaaaaaaaay past my bedtime. However...last night of class + some courtyard time at the Alluvian + sewing frenzy = up a little late. Hopefully, i'll make it.

As previously mentioned, I gave the final in Social Work 201 this evening. Raise the roof that the semester is over! It's not that I don't like it - I really do - it's that I now have my Tuesday afternoons back. So - YES! If only I didn't have to grade papers. Maybe I'll just give everyone a 90. Just kidding. Or am I?
Moving on. Long days like today require a quick and easy supper. Yes, I'm eating it right now. Yes, it's after 10. Yes, it involves carbs. Isn't rice a carb? Stop judging. Sometimes, a girl has to eat a late supper. At least I didn't breeze through McDonalds or something.


Zatarans is great in a pinch. It's also quite low in points, not to mention tasty. Did you know that one serving of Zatarans Jambalaya is only 3 WW points? Exciting, eh? Just in case anyone is wondering - I whip it up according to the package directions (omitting the oil) and add 7 oz of turkey sausage. I eat 1 cup of rice (3 points) and about 1 oz of sausage (1 point) for a 4 point meal. Who doesn't love that? Crazy folks, that's who. The blog that I lifted this oh so fancy picture took the jambalaya mixture and stuffed it in a pepper. Now, that's a good idea.

Cinco de Mayo coming up tomorrow...perhaps I'll have a Mexican dish to share? Is it possible that there are WW Mexican dishes that have not been shared on the blog? Stay tuned...

A Winning Roast (Pot Roast)

This is one of my best buds, Win. Win and I grew up together - spent many a day running around the St. James playground. Our paths crossed again after collage when we both moved back to Greenville. Win was finishing up her nurses' training and me, well, I was just milling around - trying to find my way in life. Fun times, those two years in Greenville. She lives in New Orleans now, which is a little bit further than I would like her to be. At least I'll always have her pot roast recipe.
I love pot roast. Especially on a Sunday. It seems like just the thing to do on a Sunday - eat pot roast. After a year and a half on the WW I have just now calculated the points for this little jewel.

Win's Pot Roast

2.5 lb chuck tender roast
1 can reduced fat cream of mushroom soup
1 package onion soup mix
1 large baking potato, cut into large hunks
1 large onion, sliced
3 cloves of garlic, diced

Spray a large skillet with cooking spray, heat to high heat. Brown the roast on all sides. This will, according to my step-mother, keep the roast from looking like "boiled meat." Transfer roast to the crock pot.

Add soup, 1 can full of water, onion soup mix, potato, onion, and garlic. Cook on high for 6 hours, low for 8 hours.

A few notes - I used chuck tender roast because it was what appeared to have the least fat on it. Any hunk 'o meat could be used but it might change the points value. Also, I did not calculate the points value in regards to how much gravy you get. I usually don't add any additional gravy to what i pull out of the pot and tend to go for the onions instead of the potatoes.

Today is my last Monday off before I start my new job. Big day planned....sewing, trip to Cleveland to get fabric (YES!), and hopefully some exercising. I say hopefully like I have no control over whether or not I work out. Three day work week....three days to pack up my office, do therapy, and finish all of my paperwork. It's bittersweet, really. I'm sad about leaving but looking forward to new opportunities. I must say though, if I could do anything in the world I would become a professional sewer - because this jazz is FUN.

Also this week - this girl is coming home. Words cannot describe how excited I am. Hurry home, Clare! And this time - maybe you won't go back to Denver? It's just so far. Happy Monday to all!

Bad Weather and Burritos (Breakfast Burritos)

This might be my last post for a while, there's a strong possibility that I might float away. The rain continues in Greenwood, acting as a sort of liquid steroid for the clover in my yard. Jokes aside, we are very lucky her in the 'wood. I woke up to the tornado sirens at about 830 this morning - luckily it missed us. As for now, the rain continues. I'm sure it will stop soon and then the humidity will get cranked up. All of this means that I'll probably not be leaving the house anytime soon and am looking at a lovely, lazy Sunday. A lovely, lazy Sunday has to start with a kickin' breakfast.

One of my favorite things in the world is a breakfast burrito. I'm for real. I love them. My favorite one right now is from Veronica's Bakery here in Greenwood. If you are in the area, check them out. But you'd better hurry - they are packing it up and moving to Hawaii at the end of the month. Breakfast burritos can be a little heavy on the points, so I was delighted to find a recipe for one in the Hungry Girl cookbook. It goes a little something like this....


Breakfast Burritos
adapted from Hungry Girl


1 whole wheat tortilla
1/2 cup egg beaters
2 slices turkey bacon
1/4 cup fat free shredded cheddar
salsa (optional)


Cook turkey bacon until crisp. While bacon is cooking, add egg beaters to a small skillet sprayed with cooking spray and scramble until cooked. Heat tortilla in the microwave for about 15 seconds.


In the tortilla, layer cheese, eggs, and bacon. Roll up burrito and place on plate, seam side down. Microwave for about 20 seconds. Serve with salsa, if desired.

This is more points than I usually spend on breakfast. However, it was big and pretty filling. I think it's perfect for a weekend breakfast OR as breakfast for supper. And who doesn't love breakfast for supper? Also - my tortilla was worth 3 points. If you live in a bigger city with less annoying grocery stores, I bet you could find one for less points which would make the whole show less points.


I am in major need of a fabric store in my town right now. There are so many projects I want to complete - I just keep adding to the list. I'm overwhelmed. But in a good way. Lot's of super secrete crafting going on.
