White Bean Chicken Chili

Wine, soup, bread from the Mockingbird Bakery, friends, and a fire pit is my favorite. It's just a good combination.  A good, no fail combination. 


Another no fail combination that I discovered is ground chicken in  your chili.  The Greenwood Wal Mart has finally stepped up and started carrying it and I'm looking forward to trying out new recipes that feature it.  


Wow.  I talk about Wal Mart a lot on this blog.  This might make me the biggest red neck on the block.  


You might be a red neck if you discuss wal mart more than once on your blog.  


Embarrassing....


White Chicken Chili

1 lb of ground chicken
1 large onion, chopped
2 tsp garlic
3 cups fat free chicken broth
1 1/2 tsp oregano
1 tsp cumin
1/4 tsp ground red pepper
2 medium zucchini, chopped
2 cans great northern beans, drained and rinsed
4.5 oz of chopped green chilies
1/2 cup of 2% shredded Monterrey jack cheese

Spray a large pot with cooking spray.  Cook the chicken, onion, and garlic until the chicken is done.  Add the rest of the ingredients, except the cheese, and combine.  Bring to a boil, reduce to a simmer and cook for about 12 minutes.  Remove from heat and stir in the cheese. 

Serving size 1 1/3 cup (makes about six)
