The only drawback I can find related to pancake Saturday is that pancakes are pretty high in points. Worth it, but high in points.
Enter this new recipe for fluffy pancakes. 3 points plus instead of 4 is a good thing.
And adding blueberries to a pancake automatically makes it healthier. Just so you know...

3/4 cup of milk
2 tbl lemon juice or white vinegar
1 cup all purpose flour
2 tbl sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 egg, whisked lightly
2 tbl vegetable oil
In a small cup, whisk together the milk and the vinegar (or lemon juice) Set aside for five minutes.
In a milk bowl, sift together flour, sugar, baking powder, baking soda and salt. Add milk, egg, and oil. Mix until the lumps are gone.
Heat your skillet over medium heat, spray with cooking spray. Add 1/4 of a cup of pancake mix to the skillet, cook until done.
Serving size 1 pancake (makes about 8)
