Oriental Salad

Sorry for the blurry picture, kids.  This was snapped muy  quickly because, well I was ready to tear into it.  


This salad proves a couple of things.  One - crunch rocks.  The lettuce crunches, the noodles crunch, the almonds crunch.  It's like a crunch dream come true.  

Second - not all salads are low cal / fat / etc.  This salad is eaten not so much for it's nutritional value, but for it's lovely taste.  Yes, the lettuce and the almonds are fine for ya, the oil is a "good" fat, but that's about it.  

I attempted to calculate the points on this one, just to know, but stopped because it was going to be a hot mess trying to measure it out.  So, I guessed and went on with my life.

Oriental Salad

3/4 cup + 3 tbl of canola oil
4 1/2 tbl seasoned rice vinegar
4 1/2 tbl sugar
2 tsp sald
1 tsp pepper
1 head of cabbage, chopped small
2 bunches of green onions, chopped
2 packages of ramen noodles, broken up
5 oz slivered almonds

To make the dressing, combine 3/4 cup of canola oil, vinegar, sugar, salt and pepper.  Set aside. 

Place 3 tbl of oil in a large skillet.  Add the noodles and cook until starting to brown.  Add the almonds and cook until the noodles are dark brown.  

In a BIG salad bowl, combine the cabbage and the green onions.  Toss in the noodles and the almonds. Drizzle the dressing on top and toss well to combine.
