Spicy Grilled Chicken

I feel like I'm getting better with chicken.  It doesn't unsettle me as much as it used to.  This is a good thing, I feel like I'm making small steps towards being less neurotic.  

Luckily, there is nothing neurotic about this recipe.  It is quick and easy and tasty.  It's got quite the kick but that's nothing some simple seasoning adjustments couldn't help.  Go on kids, make yourself a spicy grilled chicken sandwich. You wont regret it!

And slap it on a fancy bun from the Mockingbird Bakery.  You wont regret that, either.  


Spicy Grilled Chicken

1 large chicken breast, sliced in half horizontally to make two, thinner breasts 
1 tsp olive oil 
1/2 tsp paprika
1/4 tsp salt
1/4 tsp pepper
1/4 tsp cayenne
1/4 tsp onion powder
1/4 tsp cumin 

Combine all of the seasonings in a bowl.  Toss the chicken breast in there and coat them well. 

Heat the olive oil in a skillet with a top.  Once the oil is heat, add the chicken and cover. Cook for about five minutes on each side or until done.  

Makes two servings
