Spinach and Feta Quesadillas

I am always looking for a good, quick app.  

That and and a way to get flat abs without really doing anything.  

But let's talk about quick apps.  

Let's also make them light and a little bit healthy.  Often, if I'm having apps, that means I'm also having wine.  Or Michelob ultras.  Or something.  Since alcohol is such a calorie suck, it's a good thing for apps to be light.  I mean, I L-O-V-E a good french onion dip but sometimes we all need to go a little light.  Right?  Right.  

Here's a quick one to throw together!   
Spinach and Feta Quesadilla

2 flour tortillas
1 tsp olive oil
1 bag of fresh spinach
2 cloves of garlic, chopped
salt and pepper to taste 
1/3 cup of feta cheese

Heat the olive oil in a skillet over medium heat.  Add the spinach and the garlic, season with salt and pepper, cook until wilted.  Lay one tortilla on a flat surface.  Layer the feta then the spinach on top.  

Wipe out the skillet, spray it with a little cooking spray, put the other tortilla in the skillet.  Let it get warm and kind of crispy, remove it from the skillet, put in on top of the spinach.  (Doing it this way will mean that you have less of a hot mess when cooking.  The goal is to not fling spinach across your kitchen - that usually happens when trying to flip a 'dilla.)

Put the whole quesadilla back into the skillet, cook until it's starting to crisp and everything is warmed through.  

Remove from heat.  Cut into 8 wedges.  Serve with salsa.

  1. This looks DEEELISH! Tip - if you get yourself a griddler, you'll never have to flip a quesadilla again! - no mess AND perfectly cooked dilla on both sides. It also cooks everything else your little heart desires. Seriously my favorite kitchen gadget.
