Kale Turkey and Black Bean Taco Filling

Hurmph.  These tacos are blurry.  BUT they were good.  
They also pack a super secrete nutritional punch.  

K-A-L-E.  

Yep.  Good 'ole green kale.  Rumor on the street is that if you salt them just a touch and stick them in the oven you can turn them into kale chips.  I would imagine this tastes nothing like something like a potato chip.  I should probably try that and report back as I L-O-V-E a potato chip with all that I am.  

I also hear that you can put them in eggs.  Perhaps I'll sneak some into BB's Saturday eggs next time.  Lord knows he needs an extra nutritional boost with all of the hard lounging he does.

So here you go folks!  Do your body a favor and make these kale-a-rific tacos.  

Kale, Turkey and Black Bean Taco Filling

1 lb lean ground turkey
1/2 of an onion, chopped
1 jalapeno pepper, diced
About 1 and 1/2 cups of chopped kale
1 sweet pepper, diced
1 15oz can of black beans, drained and rinsed
1 tbsp chili powder
1 tbsp dried cumin
kosher salt, to taste
salsa 

Spray a large pan with cooking spray.  Cook the turkey, onion, sweet pepper and jalapeno pepper until turkey is done.  Add in the kale, pepper, black beans, chili powder, cumin and salt.  Cook for about 5 minutes or until every thing is heated through and seasoned.  If it seems to dry add in some salsa!  

Serving size 1 cup (makes about 5)
