Busy week + working away from home + Ruleville having minimal healthy food options can often lead to me eating junk for lunch. You know the story. You're running around trying to get things done and the next thing you know you've just eaten an extra large chicken nugget meal from McDonalds. Anybody? Just me? Ok. Fine.
I spent a little extra time on Sunday preparing a big bowl of on the go goodness so that this scenario doesn't happen this week. It's versatile. It's hearty. It's filling. It's the bomb.
Quinoa with Chicken, Black Beans and Rice
1 cup uncooked quinoa
2 cups of cooked shredded chicken
1 1/2 cup of prepared taco rice
1 can of black beans, drained and rinsed.
Cook quinoa according to package directions and place it in a large bowl to let it cool. Add the chicken, rice and black beans to the quinoa. Stir to combine.
Serving size 1/2 cup (makes about 9)
