B-A-D Brownies

This dessert is bad.  Capital B-A-D.  Not bad like it tastes bad, but bad in a guilty pleasure kind of way.  Like my love of Will Smith movies and blueberry vodka and long chicken sandwiches.  

B-A-D.  

This delightful dish was originally named something else.  Something a little risque.  B-A-D for sure.  However, seeing as how this blog is frequented by several people that wouldn't appreciate risque-ly named desserts, I decided to go with B-A-D Brownies.  

What makes them so B-A-D? 


Chocolate Chip Cookie Dough

And your eyes aren't playing tricks...that is, in fact, brownie mix.  


It's the three most beautiful things on the food planet.  I'm pretty sure that these are sitting on a pretty piece of Annie Glass at the check in desk in heaven.  

Amen.  

B-A-D Brownies
adapted from The Londoner 

1 box of chocolate chip cookie mix
1 box of brownie mix
double stuffed oreo cookies 

Preheat oven to 350.  Place a large sheet of wax paper in a baking dish.  

Prepare the chocolate chip cookies according to the directions on the back of the box. Mix them up good, add an extra teaspoon of water.  Pour / press this into the baking dish, covering the bottom.  

Place oreo cookies on top of the cookie dough layer.  

Prepare the brownies according to the package directions.  Pour them on top of the oreo cookies.  

Place in the oven and bake.  I started out at 30 minutes but they were actually in the oven closer to 35 minutes.  The brownie portion of the middle part remained pretty under cooked, I just cut around that part.  I didn't want to sacrifice the whole thing for one little spot.  

Let it cool a pit then pick up the sides of the wax paper and transfer it to cutting board.  Cut into squares as best you can...it gets a little messy!

Small Treasures

In the last week or so, the decorating of our sweet little rental house has been on. Like donkey kong. 

I'm always saying "I want more art!  I want more art!", neglecting to realize that we have some pretty sweet treasures already. 

Sweet treasures and small treasures. There's lots of gallery walls and groupings of things, uneven and leaning, but happy. Almost everything hanging right now has some sort of meaning attached to it, and I like that. 

Here is a grouping of shots from our wedding.  Yes, we are the size of my forearm.  I measured. 


Here's a wedding gift from some close family friends.  The colors make me happy and the details of the frame are lovely. 



Here's an old favorite.  This is a shot of Sangria that Brandon made for a party a few years ago.  It was rescued from a closet where it was suffering from a broken frame.  The picture was suffering from a broken frame, not the sangria.  Just in case you were confused.  



Here's a group of favorites.  This wall has a gangsta' lean situation going on.  I think it gives it character.  Top from left to right:  a drawing by Brandon's friend Rainey Mills, a picture of the Cotton Row in Greenwood, a fawggy bridge that Brandon gave me for Christmas.  Bottom left to right:  a picture that my grandmother gave me of one of the places we visited on our trip to Europe, a cool print of our fair state, a drawing of Wrigley Field given to us by Brandon's cousin who actually took us to a Cub's game a few years ago.

Tie Dye for Baby Moore


What do you do when your Phish loving best friend is having a baby?  Well, you tie dye day gowns.  Obvi.  



And you don't just settle for that kit from Wal Mart.  Well maybe you would have if they would have had it.  But they didn't so you don't settle.  Instead, you go to this website and purchase a kit complete with squirt bottles and protective face coverings. 

And then you feel pretty legit.  


So legit, in fact, that you think you are above wearing the gloves when you apply the dye.  But no one is that legit so you learn your lesson.  


But it's all OK because later on your friend that loves to keep her hands busy and do things rinses it out for you...


And then you have the perfect gift to present to that Phish lovin' friend and her I-know-he-or-she-will-be-adorable baby. 

And ya'll I've got LOTS of this stuff left.  Let me know if you need anything tie dyed and I will hook you up.

A Few on Friday

'Sup!  


Hope you're having a happy Friday afternoon.  I'm enjoying my view of the blue sky, eating a PB and J sandwich, and putting off paper work.

How stinkin' cute is this?  I would probably often gravitate to the "I could eat a horse" portion.  Because let's face it, most of the time I could eat a horse.  Watch for me on Man vs. Food.

On a related topic, at subway this week, the Brandon reminded me of that time that I ate a whole cheese cake by myself.  This was pre-weight watchers.  It was not a proud moment, but one where I realized where the boy was in it for the long haul.

My ravenous appetite is not something that I worry about.  I've let it go and am glad that I did!

Happy weekend to all! I'm looking forward to fire pit, soup, and wine tonight and then a baby shower tomorrow night. I've got two more projects to finish before I go, hoping to have some time in the sunlight this afternoon.  

Here is sweet, pregnant Clare right before my wedding.  She was one of the three girls in the wedding with child.  Can't wait to shower her and Blake with love and gifts and really good food...


She is going to absolutely rock parent hood.  Leah appears to be and I'm pretty sure Kathryn is going to rock it as well.  So being pregnant at my wedding directly correlates your awesomeness as a parent.

Oven Baked Chicken Fajitas

Who doesn't love a chicken fajita??!!  If you don't, we probably couldn't be friends.  But I'm sure that's not the case.  So we can be friends.  

So for all of you chicken fajita lovers out there, here's a super easy and super quick way to enjoy them.  On Monday night, I was able to whip these up, eat them, wander around my house, and still be at Zumba class at 715.  I tell you all of this not to brag, but to prove my point that it's quick.

Oven Baked Chicken Fajitas
adapted from Real Mom Kitchen

1 lb of chicken breast tenderloins (about 8)
2 tbl of vegetable oil
2 tsp chili powder
2 tsp cumin
1/2 tsp garlic powder
1/2 tsp oregano
1/4 tsp salt
1 can of rotel
1 onion, sliced
1 bell pepper, seeded and sliced

Preheat oven to 400.  Spray a baking dish with cooking spray.  

Place the chicken in the baking dish.  In a small bowl, combine the oil and all of the seasonings.  Drizzle this over the chicken.  Pour the rotel on top then add the onions and peppers to the dish.  Give everything a stir to make sure the seasonings are covering the chicken.  Cook for 25 minutes or until done.  

Serving size 1 tenderloin + vegetables (makes 8)
Points plus 3

Serve with tortillas and toppings, be sure to adjust points.

Black Bean, Egg, and Cheese Breakfast Burrito

I've been spending some time recently looking at the website choosemyplate.gov.  It's an informative little site, meant to educate us Americans on nutrition and diet.  The "plate" has replaced the food pyramid, I believe it gives a wonderful visual tool to help get more nutritional bang for your buck.  


I, for one, was disappointed to see that french fries did not have a place on the plate.  But oh well.  

So, in my mind, if I follow this guideline then I'll feel fuller longer, eat less empty calories during the day, and can save my calories and points for weekend festivities.  

Sounds like a pli-zan to me!  

The following recipe is something that I tried using this plate as a guide, I feel like it's pretty close although I shoulda used a whole wheat tortilla. Oh well.  If that's the biggest mistake I make this week then I'll be fine...


Black Bean, Egg, and Cheese Breakfast Burrito

1 egg, lightly beaten and seasoned with salt and pepper
2 tbl 2% shredded Mexican blend cheese
1/3 of a cup of black beans
1 low carb tortilla

In a skillet sprayed with cooking spray, scramble the egg.  When it's just about done, add the black beans and cheese.  Remove from heat.  Add the egg to the tortilla, wrap it up like a burrito.  

Serving size entire burrito

BBQ Burgers

I hear there was a pretty exciting football game on Sunday night.  I say "I hear" because I smooth passed out on the couch at around 815.  I did wake up with extreme heart palpitations about every 20 minutes as Brandon would scream wildly and run around the house, but that's about as close to the action that I got.  Sometimes, I just hit a wall and going forward is not an option.


Luckily, I was able to cook some supper before the Great Sunday Night Pass Out.  The down side is that I didn't get a picture.  My father in law was dining with us; I think he already thinks I'm strange so I didn't want to subject him to having to wait to eat while I got a good snap of the food.  The up side is that these burgers were the bomb.  Whip them up for your next football themed event.  And serve them with tater tots.  It was a hit people, a hit.  


This is Willard at our wedding.  I'm told he didn't leave this perch all day. 

BBQ Burgers


1 lb of lean (93/7) ground beef
1/2 cup of 2% shredded Mexican blend cheese
1/4 cup of BBQ sauce
pepper, seasoned salt, onion powder to taste


Combine all ingredients, work them into four equal sized patties.  


Cook however you cook your burgers.  I did mine on a counter top grill; my spring time resolution is to learn more about grilling.


Serving size 1 patty

Serve with toppings of your choice on a light hamburger bun.  Just make sure you adjust the points...if you're into that.

Panko Crusted Pork Chops for Two

I burned these pork chops.  Whoops.  But they were still pretty darn good.  I'll probably make them again and, you know, not burn them.  Or at least try to not burn them.  I can't make any promises.  

The night that I made these was pretty intense.  Smoke filled the house, doors and windows were opened, and dishtowels were waved around frantically in an effort to clear the smoke out.  When I woke up the next morning, my hair kind of smelled like I'd been loitering around a fire pit. 

But no.  'Twas only burned pork chops.  


Panko Crusted Pork Chops for Two
from The Kitchn

2 tbl canola oil
2 thick boneless pork chops
1/2 cup panko crumbs
2 tbl grated Parmesan cheese
1 heaping tbl Italian parsley
1/4 cup of flour
2 eggs, lightly beaten 
salt and pepper

Preheat oven to 375.

Mix the bread crumbs, Parmesan, parsley, and 1/2 tsp of salt in a shallow bowl.  In another bowl, add the flour.  In a third bowl, add the eggs.

Dredge the pork chops in the egg, then the flour, then the panko.  

In a heavy skillet, heat oil.  Add the chops and cook on each side until they are gold and crispy, about 2 minutes.  Or perhaps less.  I don't know.  I burned mine.  

Transfer the chops to a baking sheet and finish cooking them in the oven for about 15 minutes or until they reach an internal temp of 130.  Remove from the oven and allow them to sit for about five minutes. 

Serving size 1 pork chop

**The points on this one are probably not that high as you don't use all of the flour and the eggs.  I usually put things on the high side just in case.

Drapes!

TA DA!!!! Drapes are done!  


All of the drowning in fabric and sticking myself in the thigh with straight pens was worth it. And now....bring on the cafe curtains for the kitchen!

Interested in sewing your own?  I followed this tutorial from Cool People Sew.  They were pretty easy and came together quickly for something so big.  The trickiest part, for me, was wrangling all of the fabric.  That and making everything even and lined up.  But that's always hard for me.  I hate a detail.


But I don't hate a cheap frame from wal-mart....

A Few on Friday

Ya'll.  


I made a frightening discovery last night.  


I was at Giardina's getting ready to head home.  Brandon was also getting ready to come home as he had just gotten off work.  He announced that he was going to stop by Burger King and get a long chicken sandwich.  I'd had two glass of wine and was feeling festive so I, of course, announced that I wanted one, too.

So, I excitedly made my way home.  When I say that long chicken sandwiches (LCS) from Burger King are one of my favorite things in the world, unfortunately I'm not kidding. I've been trying this thing in the last few weeks where I track points for everything I eat.  Good, bad, and ugly.  I plugged in the wine and oysters and captains wafers I'd had that night and went to search for the LCS.  Um, it was 20 points.  TWENTY.  I was (am) heartbroken.  I'm not sure what I thought it would be, but I sure as hell didn't think it would be  20 freaking points.  


I called Brandon to cancel my order.  He had already gotten it and I told him that I just wouldn't be able to eat it.  He said he understood but not to worry.  He'd also gotten me a large sprite and some fries, so I could just have that.  


Oh, Brandon.  


I had a turkey and cheese roll up instead.  


What do you eat for a late night snack? 


Anyway.  Enough about that. I beginning to sound crazy.

Hope it's a good day so far.  I'm looking forward to a weekend of sewing and running and baby showering and engagement partying.  Errbody cross your fingers that I remember to pick up my dry cleaning so that I'll have some stuff to wear; it's slim pickins clothes wise around here.

Who knows.  Peggy knows.  She knows what my colors are.  I'll have to consult her.


And now I need to consult you.  


I'm not a decorator.  Never have been, probably never will be. I do, however, enjoy a comfortable space and want my home to be a place that is inviting and calming.  I'm almost finished with our den and I think i'll be pretty proud when it's done.  I plan to finish up the drapes this weekend and then hang wedding pictures as soon as they are framed.  Don't worry, I'll show you pictures.  


The next room on my list to tackle is "the man room." This is a room that appears to have been added on to the house.  It's completely level with the carport so it's usually filled with leaves. It's a little dark, very cozy, and Brandon's favorite place to camp out.  Here's a picture:



I snapped this on my way out this morning, this is why I didn't take the time to remove the blankets and hide the remotes.  Here are some things you should know before we proceed:

  • It's a rental house, we're not painting
  • The couch is black floral, the chair is bright red.  The slipcovers aren't going anywhere despite being heinous. 
  • The rug probably isn't going anywhere, Brandon loves it. 
  • I like the size, shape of the ottoman just don't like the fabric.  I can cover it.  Or someone can cover it. 
  • I actually like the window coverings...they kind of have a natural bamboo thing happening.  
  • I want to lighten the space up.  
  • It's the first room you see when you walk into our house
OK so what I would like to do is make some pillows for the couch and chair.  I'm thinking a big European pillow for the chair.  You might be thinking "wow LM that's going to be a big pillow!"  However, if you think the back of the chair is bad you should see the front.  I call it the WBC.  I'm not typing out what that stands for on this blog, you can email me and I might tell you if you really want to know. For the couch I'm thinking of sewing an envelop pillow covering that would fit over a standard size pillow for each side.  Again, you might be thinking "wow LM that's going to be a big pillow!" but I can see it in my head and it works.  Plus that couch his like the best napping couch ever so standard pillows would be awesome. Maybe also some smaller pillows to go on the couch.  And how about new fabric for the ottoman?  I think so.  

OK so here's where YOU come in.  What fabric?  Here are some great online fabric sources....


Let me know your suggestions!  This one is just to much for me.  I can't wrap my brain around that rug...

Viking Half Marathon

When walking or jogging through my fair town, I often think to myself "Dang!  I am lucky to get to live in a town that has such great walking streets!"  


Whether it's on Grand Blvd or one of the many side streets that flow to and from it, Greenwood offers some pretty sweet scenery to look at when exercising.  Don't believe me?  Check it out for yourself!


Viking is hosting a half marathon and 5K and you can sign up for it here.  Unfortunately, I wont be able to participate due to a previous commitment BUT the half marathon goes right past my house...if you run let me know and I'll make  you festive sign to cheer you on.  



Hamburger Mess

It's been way to long since a redneck casserole was posted on this blog.  Lets fix that.  Now. 

Featured today is "hamburger mess."  And it sure is a mess.  A mess of amazing.  

Its easy to make, maybe a little time consuming, but completely worth it.  It's kind of like hamburger helper, kind of like spaghetti; a perfect cold weather dish.  If you count 'em, might want to save your points.  This one is on the high side but worth every single one...


Hamburger Mess
adapted from Michael Rhulman 

1 large onion, diced
3 cloves of garlic, chopped
cooking spray
2 lbs of lean ground beef
salt and pepper
28 oz can of whole tomatoes
cumin, onion powder, Worcestershire (to taste) (and use whatever spices you like)
1 box of whole wheat pasta
1 cup of part skim mozzarella 
1 cup of reduced fat cheddar cheese

Preheat the oven to 400. 

Cook onion, garlic, and ground beef in a large pot.  Season with salt and pepper and whatever other seasonings blow your hair back.  

With a hand blender, blend the tomatoes.  Add the tomatoes to the beef, bring to a boil and reduce to a simmer.  Cook for about an hour.  Taste and adjust seasonings as needed.  

While the beefy mixture is cooking, cook the pasta for half the time the box instructs and drain.  After the hour is up, add the pasta to the beef mixture and stir.  Remove from heat, let the pasta soak up the juices, and allow to cool.  

Place in a baking dish sprayed with cooking spray, cover with foil, bake for about 45 minutes.  After the 45 minutes is up, uncover the pasta, switch the oven to broil, add the cheese, and cook until the cheese is slightly browned.  Be sure to watch it!

Divide into 8 equal slices. 

Serving size 1/8 of casserole

I made this in the morning and cooked it that night when I got home from work.  I just stuck the macaroni and beef mixture in the fridge, covered with foil then popped it in the preheated oven that night.  Bam!

My Scone Store (Skinny Chocolate Chip Buttermilk Scones)

I think I'm going to quit my job and open up a scone store.  Who's with me??  

It would be a blast.  We could use silpats and experiment with interesting flavor combinations and drink coffee all day long.  There would be t-shirts made and a reading nook and we could do yoga three times a day. It would be a happy place, my scone store. Dogs would be allowed, bad attitudes wouldn't. I've got to come up with a name.  Be thinking....

This is sounding good.

Until I can open the scone store, we'll all have to settle for these...  
  

Buttermilk chocolate chip scones. Everyone together now.....hell yeah

And guess what!  They're point friendly!  And not to hard to make!  And did I mention that they taste amazing?? 

No go on, get your silpat and your flour and get to work!

Skinny Chocolate Chip Buttermilk Scones

3/4 cup of cold buttermilk
1/4 cup of sugar
2 tsp of vanilla extract
1 large egg
1 cup of all purpose flour
1 cup of white whole wheat flour
1 tbl baking powder
1/2 tsp of salt 
3 tbl of chilled butter, cut up (make sure it's cold!)
3/4 cup of chocolate chips
1 large egg white, lightly beaten
1 1/2 tbl of sugar

Preheat oven to 375.  Combine the first four ingredients, stir with a whisk and set aside.  

Combine the flour, baking powder, salt with a whisk.  Cut in the butter.  If you have a pastry blender, use that.  But chances are you don't.  So cut it in with two knives OR dive in there with your paws and crumble the butter up.  You are wanting the mixture to resemble coarse corn mill.  Gently fold in chocolate chips.  Stir in wet ingredients until just moist.  

Place the dough on a floured surface and kneed about 4 times with floured hands.  (You know I just typed "flowered" and had to erase it)  Place it on a greased baking sheet (or silpat) and cut it into 12 equal pieces.  

Bake for 18 - 20 minutes or until done.

Italian Meatball Soup

What up, pre-made turkey meatballs from the Wal-Mart?  What a find, what a find.  I was jazzed when I discovered them; they made this soup easy to the max!  And tasty, too.  And much more point friendly.  Y'all.  Meatballs is high in points.  Just FYI.  

But turkey meatballs aren't.  This particular brand allows you to have 3 meatballs for 4 pp.  I've got about a half a bag of these left and if you think I'm not going to be pulling them out for meatball subs then you are cray. 


I made this soup one night last week; it was nice with the sudden burst of cold weather and kept in the fridge well. You should try it!  But be warned...it might not impress everyone.  The Brandon confessed yesterday when we were having it for leftovers that it was a bit to chunky for his taste.  He ate his grilled ham and cheese, though.  Don't worry, he's not going to starve.    


Italian Meatball Soup
from Framed

2 carrots, peeled and diced
2 stalks of celery, diced
1 small onion, diced
1 tbl of olive oil
2 tbl tomato paste
4 garlic cloves, minced
1 tbl oregano
1 28 oz can of crushed tomatoes in puree 
2 cups of beef broth
1 1/2 cups of water
18 fully cooked turkey meatballs
salt and pepper

Heat oil in a large pot, add the carrots, celery, and onion.  Cook for about five minutes or until soft.  Add the tomato paste, garlic, and oregano. Stir.  

Add tomatoes, broth, and water and bring to a simmer.  Cut meatballs in half and add to soup.  Simmer for ten more minutes and season to taste with salt and pepper.  

Serving size 1 cup (makes about 10)

Parmesan - Roasted Broccoli

I've said it before and I'll say it again.  Square meals are not my strength.  I'll do a bang up job with a casserole or a soup, but if it requires two sides and a bread then we're all out of luck.

However, just because something is not your strength it doesn't mean that you should just give it up all together!  Today's recipe is a recent attempt at a square meal.  We had a simple pork tenderloin (pre-marinated, sue me) and some broccoli.  Brandon also had a yeast roll, which was festive for him.  I'm not jealous. 

I'm sharing with you today the broccoli recipe.  It's a recipe from Ina Garten that I played around with to make a little more point friendly.  It was pretty tasty, even with me forgetting to salt and pepper it. Why is it so hard for me to remember to add salt and pepper, the two most basic cooking ingredients on this earth?  Who knows.... 


Roasted Parmesan Broccoli
adapted from Ina Garten

2 lbs of broccoli
3 cloves of garlic, sliced
2 1/2 tbl olive oil, divided
1 1/2 tsp salt 
1/2 tsp black pepper
1 tsp lemon zest
1 tbl fresh lemon juice
1/6 (is that possible?  I'm going to 1/2 of 1/3 of a cup.) cup of Parmesan cheese

Preheat oven to 425 degrees.  Cut the broccoli up, discarding the thick stalks.  You could wash it, but I didn't.  I agree with the person that said "If it doesn't die in a 425 degree oven, then it deserves to get me." 

Spread the broccoli out in a single layer on a baking sheet.  Toss with 2 tbl of olive oil, salt, and pepper.  Roast for 20 - 25 minutes or until crisp tender and the tips of some of the broccoli is brown.

Remove from the oven and immediately top with the lemon zest, lemon juice, Parmesan cheese, and remaining olive oil.  Serve warm. 

Serving size 1/4 of recipe

**It's worth mentioning that this might seem a bit high in points for broccoli.  However, when you plug broccoli into the recipe builder it assigns a point value to it even though in theory it's a "free food." Some people don't count vegetables when they cook, I do.  I feel like it gives me an extra cushion if I need it.

Chickey is Two Dozen

Join me in celebrating Chickey as she turns 24 years young today. Last year I wrote her a poem, this year I'm just going to tell her via blog and in person that I think she's the greatest and I'm glad she was born.  

Chick, I think you're the greatest and I'm glad you were born.

A Few on Friday

Hola! Happy Friday!  


I am on a mission.  A mission to find an external hard drive.  Last night while perusing Pinterest, my computer threw some sort of a fit.  The screen turned blue, it gave me a cryptic message, and turned it's self off.  After staring at a blank screen with really wide eyes for a little bit, I turned it back on and googled "external hard drive."  


I've got way to much music on this beast to see it all just disappear.  That is not happening.  


46 seconds into my search for an external hard drive, I realized that I know absolutely nothing about external hard drives.  Can you help?  Do you have one?  People, give me your knowledge.  And pray that this beast of a lap top makes it just a few more months.  I got shizz to do.  


I've been getting back into cooking WW friendly meals this week; I must say that I've enjoyed it.  What I've enjoyed the most though is actually cooking and prepping with supplies that do not suck.  Like knives and flexible measuring cups and pretty blue Le Creuset. Unfortunately, word on the street is that the fine folks at Le Creuset are discontinuing Cobalt blue.  This is all fine and good except it's the color that I chose for my Le Creuset.  Rude. 



This explains the awesome prices. Oh, how I love the 8 qt stockpot.  It's so deep, it's like a tunnel of goodness when you make soup.  

Oh, well.  Life has ups and downs.  And if Le Creuset discontinuing their cobalt line is my biggest down of the day, I think I'll make it.

Lulie Wallace is an artist that I saw on some blog, I'm in love with her colors!  So happy.  There's a space on our dining room wall that is in some dire need for some color.  I think this would be awesome!

OK so far today I'm needing an external hard drive, a new computer, all of the cobalt blue le creuset I can find, and art.     Something tells me that the small check I'm about to deposit from counseling folks on the side is not going to cut it.  Looks like I'll be starting some jars.  

Hope everyone has a good weekend!  I'm venturing to Starkville to celebrate Chickey's birthday, visit with family, attend a keg party, and go for a run.  Not necessarily in that order.  I'm going for 4 miles on MSU's campus...trying to get some hills in.  Pray for me.
